Marcus Restaurants is excited to announce programming for its Winter Chef Series scheduled to begin Saturday, Jan. 18, 2014. The winter program will run every Saturday through Feb. 8, 2014, from 10:00 – 11:30 a.m. at the Mason Street Grill Chef’s Counter, located adjacent to The Pfister® Hotel.
The Winter Chef Series will feature chefs from Hilton Milwaukee City Center, Milwaukee ChopHouse, and Miller Time Pub & Grill. Each 90 minute session will include a tasting and interactive dialogue with the chef.
“All of the classes in the winter session will focus on helping to educate our guests on ingredients and techniques, ” said Bill Doyle, Executive Chef at Hilton Milwaukee. “We want to give people tools they can utilize at home on an everyday basis.”
Guests will get to know some of the city’s culinary leaders, enjoy perfectly paired beverages and sample each chef’s preparations, while learning great tips. The atmosphere is light, friendly, and fun, with an emphasis on learning. With classes limited to 20 guests, attendees will enjoy a close-up look at cooking techniques in an intimate setting.
Following is a listing of each specific class in the Winter 2014 series:
January 18: One Pot Wonders
Bill Doyle, Executive Chef, Hilton Milwaukee City Center
Chef Doyle will demonstrate the incredible versatility of dishes that can be prepared in a single pot, with an emphasis on braised beef shoulder. Guests will also get a tutorial on the preparation of tomato marmalade, pumpkin bisque with candied bacon, and winter vegetable tian.
January 25: Fabulous Fennel
Bill Doyle, Executive Chef, Hilton Milwaukee City Center
Chef Doyle will demonstrate the preparation of classic winter foods with fennel as a key ingredient. Crunchy, with a slightly sweet flavor of anise, fennel adds a unique dimension to many dishes. Besides showing you his secrets to cooking with fennel, Chef Doyle will discuss multiple course menu design and combinations of flavors and portioning.
February 1: Pairing with Spirits
Aaron Miles, Executive Sous-Chef, Milwaukee ChopHouse
All too often, the home chef is understandably befuddled by what drinks to serve with dinner. Join Chef Miles and learn how to balance the unique flavor profiles of specialty cocktails and liqueurs with foods of all type.
February 8: Smokin’ Good
Anthony Lemens, Executive Sous-Chef, Miller Time Pub & Grill
Chef Lemens will reveal the secrets to preparing a delicious smoked pork tenderloin. To accompany this, he will be demonstrating the preparation of sautéed brussels leaves, squash puree, and Calvados demi-glace.
Tickets are $29/person or $49/couple, per weekly session. Guests can choose to stay the night Friday or Saturday evening with accommodations in a deluxe king or deluxe double guest room at The Pfister, starting at $129. Chef series tickets are sold separately.
