SHORTBREAD TEA COOKIES
From Chef Travis Martinez of The Pfister Hotel
10.5 oz soft butter
4.5 oz sugar
3 oz evaporated milk
7.5 oz cake flour
4.5 oz pastry flour
2 pinches of salt
1.5 tsp vanilla
Cream butter, sugar, salt, evaporated milk and vanilla until fluffy
Mix in the flour until just incorporated
Roll out dough and cut
Chill for a couple hours
Bake at 325⁰ for approximately 13 - 15 minutes
Dry at 280⁰ for 15 - 20 minutes more
